Hand forged in Shimabara, Nagasaki, Yosimitu Kajiya has been preserving traditional Japanese blacksmithing techniques since 1937. Today, third generation blacksmith Junichi Ide continues the family craft, producing knives that are exceptionally sharp and full of the character that can only come from a small traditional forge.

This knife features a Shirogami #2 (White #2) carbon steel core laminated with iron in a traditional san-mai construction. Hardened to approximately 62 HRC, Shirogami #2 is prized for its ability to take an exceptionally keen edge while remaining remarkably easy to sharpen. With very few alloying elements, it offers the pure, responsive cutting feel that carbon steel enthusiasts seek.

The rustic kurouchi finish preserves the character of the forging process, with subtle variations in the surface making each blade unique. Because these knives are individually hand forged, no two pieces will be exactly alike. The hammer marks, finish, and coloration give each knife its own personality.

This is a knife for those who appreciate the authentic side of Japanese knife making: simple materials, traditional techniques, excellent sharpness, and plenty of character. It does require more care than stainless steel. Please wipe the blade dry after use and avoid leaving acidic or wet ingredients on the surface. A light application of camellia oil is recommended for long term storage.
