The Yoshimi Kato SPG STRIX is finished to an exceptional standard by one of Echizen’s most respected makers. From the first glance, it’s clear this knife is something special. The distinctive V-shaped tsuchime (hammered) pattern and mirror like polish immediately catch the eye, but it’s the ultra thin spine and remarkably slim choil that really set the tone - this is a knife built for precision and performance.

In hand, the knife feels exactly as a premium Japanese blade should. The octagonal rosewood wa handle is comfortable and secure, while the subtly rounded spine make long prep sessions effortless on the fingers. Balance is excellent, and the blade tapers aggressively to an exceptionally fine tip, making delicate work, detail cuts, and controlled slicing feel natural and intuitive.

At the heart of the knife is SPG STRIX powdered stainless steel, hardened to around 65 HRC. This is an impressive achievement, giving STRIX an elite edge retention while being easier to sharpen than most steels at its level of performance. Edge retention is outstanding, making it especially well suited for busy professional kitchens where downtime between sharpening matters.

Being fully stainless, both core and cladding, the knife is refreshingly easy to care for. Simple washing and drying are all that’s needed to keep it looking and performing at its best, without the worries that come with reactive carbon steels.
