Tsunehisa translates to "Permanence", named after the idea that good knives will last you a lifetime. The brand prioritises functionality and affordability - resulting in a carefully curated selection of knives that anyone can appreciate. Tsunehisa's knives are made by a collective of blacksmiths and sharpeners across Sakai, Tosa and Seki. The brand was founded by Takayuki Shibata, world reknown for being an excellent knife sharpener and also the founder of Masakage, Koutetsu & Tinker. Over the years, Shibata-san has built close relations with many skilled blacksmiths across Japan, playing a huge role in growing the presence of Japanese kitchen knives internationally.
 
Hand-forged and hand-crafted in Tosa, the Tsunehisa Migaki Ginsan series offers an exceptional blade for the price. As the blade is hand forged, its spine is thicker towards the heel compared to the tip. This gives the blade an excellent balance with more weight towards the area where you would pinch-grip. The end result is a blade that feels more controlled, nimble and substantial - all at the same time. The spine and choil are also rounded making the blade comfortable in hand.
 
This series features Ginsan (Silver 3), a fine-grained stainless-steel that is easy to sharpen and has excellent edge retention. Ginsan overcomes the major downside of rusting associated with carbon steels (e.g. Aogami and Shirogami), while still providing many of the same benefits like ease of sharpening, higher peak sharpness and toughness.
 
In other words - they cut and perform like carbon steel knives, but without the high maintenance. As such, Ginsan knives are extremely popular and are perfect for anyone looking for a stainless steel blade with superior performance.
