Crafted in Sanjo, Niigata, by Toshihiro Wakui, the Kurouchi Nashiji series reflects the work of a highly regarded maker known for his exceptional grind and craftsmanship. A third generation blacksmith, Wakui-san transitioned from forging traditional tools like crowbars to kitchen knives, refining his skills under Kazuomi Yamamoto of Yoshikane. In just a few years, he established a reputation for producing blades with outstanding cutting performance and value.
This series features a Shirogami #2 (White #2) carbon steel core, hardened to 63 - 64 HRC, delivering excellent sharpness and a clean, precise cutting feel. The stainless steel cladding helps reduce maintenance, making it a practical option for those who want the benefits of carbon steel without the full upkeep.
Wakui’s signature grind is on full display here - the blade is impressively thin behind the edge for effortless cutting, while maintaining stiffness along the spine for control and confidence. Combined with a well executed distal taper, this results in a knife that glides smoothly through ingredients with a responsive, satisfying feel.
