A perfect introduction to the world of carbon steel, the Tadafusa Nashiji Gyuto offers a superb balance of performance and practicality. With a Blue #2 carbon steel core wrapped in stainless cladding, this knife delivers the sharpness, edge retention, and cutting feel of traditional Japanese steel - while keeping day-to-day maintenance relatively fuss-free.

Handcrafted in Sanjo City, Niigata Prefecture, Tadafusa brings over 60 years of experience to each blade. Their approach blends skilled hand-finishing with efficient production techniques, offering remarkable quality at an accessible price point.

The nashiji (“pear skin”) finish gives the blade a rustic aesthetic, while also helping to reduce food sticking. An integral bolster walnut handle provides a sturdy, comfortable grip, blending both Japanese and western design elements. As a Sanjo forged blade, this collection has the distinct Sanjo taper where the blade is very thick near the handle, then tapers quickly towards the tip. Overall, the Sanjo taper shifts the balance point of the blade towards the bolster and gives the knife a great sense of maneuverability while providing some heft so the blade feels confident in hand.

Note: As with all carbon steel knives, the core steel is reactive. Be sure to clean and dry the blade after each use to prevent rust.
