For over 80 years, Sukenari has honed its reputation as one of Japan’s most respected knife makers, known for its exceptional sharpening techniques and commitment to using only the finest materials.
At the heart of this knife is ZDP-189, a powdered metallurgy steel developed by Hitachi Metals. With an exceptional working hardness of 65-67 HRC, this steel allows for a remarkably long-lasting edge retention that outperforms nearly all other cutlery steels. Clad in stainless steel, the semi-stainless ZDP-189 core is protected by its cladding for easier maintenance. (While ZDP-189 isn't fully stainless, it is nowhere as rust-prone as typical carbon steels. Just make sure to store it dry, and oiling is optional.) The blade is finished with a refined hairline polish, offering a subtle shine. Combined with Sukenari's signature convex grind, this blade glides through delicate ingredients with little drag.
