When we first got hold of the Miyako knives, we handed it off to one of our friends who immediately remarked: "斯文" (Sīwén). Which directly translates to "gentle" or "elegant". And this hit the nail on the head entirely - these kitchen knives feel extremely refined and elegant in the hand. It may be something about the way the handle curves or the texture of the wood but it is something that cannot be expressed in pictures.
What we can capture is the 33-layers of Damascus steel and the bead blasted finish of the bolster and butt of the handle which adds further to the beauty of this blade.
The Miyako knives are produced by Shizu Hamono, which is quickly becoming one of our favourite brands as they seem to consistently produce great kitchen knives that are unique and high quality.
