Designed by renowned sharpener Takayuki Shibata, the Koutetsu SG2 series is the result of a pursuit for cutting perfection. With a unique silhouette inspired by the straight lines of historic Japanese warships, this knife glides effortlessly through ingredients thanks to its ultra-thin grind and carefully considered geometry. For best results, use with clean technique and avoid cutting through hard materials like bone or frozen food.

Made with SG2 powdered steel, these knives have incredible edge retention and will stay sharp for a long time. SG2 is a premium stainless steel made from a process called Powder Metallurgy, where the steel is formed by heating compacted metal powder. In the case of SG2, this results in a fine-grained, high-alloy steel which contributes to its superb edge retention that is superior to other popular stainless steels (e.g. VG10, Ginsan, AUS8).

What sets the Koutetsu apart is its exceptional fit and finish. The spine and heel are rounded for comfort, and its brushed finish with engraved kanji delivers understated elegance. A traditional rosewood octagonal handle with pakka wood ferrule keeps the knife lightweight and balanced.
