This guided sharpener ends our years long quest to find a reasonably priced, easy to use and effective angle guided sharpening system.
Many cooks come to us with a simple request - how can I sharpen my knives effectively? Usually we point them to sharpening stones which are the best method in terms of speed and effectiveness but this method has a daunting learning curve. Especially with maintaining the correct angle which is extremely important for both edge retention and edge toughness. Too obtuse an angle and the edge sharpness will not last, too acute an angle and the edge may chip or deform during use.
Honing rods and pull through sharpeners are easy to use, but they can gouge out chips on the knife since the sharpening surface is round and not flat. These sharpening methods also do not solve the issue of maintaining a good sharpening angle.
A solution that has come up in more recent years was the use of rolling sharpeners. They offer guided angles and the flat sharpening plate does not gouge out chips. However, even the best systems from the most established brands are painfully slow. Sharpening on rolling sharpeners is a test of patience with a simple touch up taking more than 30 minutes (from our testing). The final result is only barely acceptable sharpeness, struggling to cut printer paper cleanly. And the final nail in the coffin would be the price, with entry models starting at $150+.
Our guided sharpener follows the same concept as the popular Lansky and Hapstone systems which sharpen knives quickly but our sharpener has unique benefits. Firstly, the guide rods for sharpening are found on two sides instead of one. This minimises the need to flip the blade during the sharpening process, and the knife stays in the same position during the entire process - saving you time. Second, the entire setup can be finished without the need for tools, this includes adjusting the angle system which can be set to any angle between 15 and 30 degrees.
The only downside we found for this product was its plastic base, which is still sturdy and thick. But a metal base would have been preferred for added stability. Some cost cutting to bring the price down. Thankfully most other components are made from solid aluminium.
It is expected that each knife would take between 10 - 15 mins to sharpen on our guided system. After finishing sharpening, we recommend using a leather strop to refine the edge to its maximum sharpness (optional).
