Seki Kanetsugu is a brand that always amazes us with their level of fit and finish. There is rarely a poorly installed handle or a blade that isn't polished or sharpened accurately. Their knives are pretty much spot on 99% of the time, which is more than can be said about many other brands charging twice the price.
The Shiun series has a brightly polished blade that easily glides through food, with a hammer-forged pattern that not only looks amazing, but also helps with food release. It also features a variety of unique handles with lots of personality. Cerulean Blue - a color that is reminiscent of the deep sea. These handles are made from Oak wood and lacquered for a blue, glistening finish like that of sun rays on sea waters.
Beyond aesthetics, these blades are made with VG10 stainless steel, a popular Japanese steel which provides superior edge retention and is easily sharpened on conventional whetstones. Its “Hamaguri” blade shape, which is a convex grind, offers a good balance between cutting sharpness, food release and toughness, making it the perfect grind for practical use.
