Ohishi is a brand created by Akifusa, built on the idea of delivering well designed, high quality kitchen knives by collaborating with skilled blacksmiths and workshops across Japan. The name draws inspiration from the Japanese word “oishii,” meaning delicious, as well as the name of the village Oishi (大石) near Mount Fuji where the brand began.

At its core, Ohishi represents a simple philosophy: thoughtfully crafted tools that help you create great meals. By combining practical design, reliable performance, and a clear vision, Ohishi aims to make everyday cooking more enjoyable and ultimately, more “oishii.”

The Ohishi Tsuchime SLD series forged by the blacksmith Tadafusa (忠房) is a beautifully balanced all purpose knife, designed for cooks who want high performance without high maintenance. This blade showcases a striking hammered (“tsuchime”) finish that not only adds visual character but also helps reduce food sticking during prep.

At its core lies SLD semi stainless steel, hardened to 62 - 63 HRC. This steel blends the best qualities of carbon steel and stainless steel: it takes on an exceptionally keen edge, holds it longer than typical stainless steels, and remains relatively easy to resharpen. Unlike more reactive high carbon steels, SLD is far less prone to rust, especially with the added protection of stainless cladding - making it a practical choice for daily use with minimal upkeep.

Performance wise, the knife is thoughtfully ground: thin behind the edge for effortless slicing through dense ingredients like root vegetables, while maintaining a thicker spine for stability and control. This gives you both precision and confidence across a wide range of kitchen tasks.

Finished with a comfortable right handed D-shaped rosewood and pakkawood handle, this knife delivers both performance and comfort.
