Mutsumi Hinoura is the 4th generation of the legendary Hinoura family. They started forging kitchen knives in 1912 in the city of Sanjo, Niigata and have over a 100 years of experience. Mutsumi Hinoura is the son of the renowned Tsukasa Hinoura who is famous for his highly coveted "River Jump" Damascus blades.

Knives forged by Mutsumi are branded "Ajikataya" (味方屋) which is hand chiselled onto each knife.
