Hand forged in Sanjo, Japan by fourth generation blacksmith Mutsumi Hinoura, this gyuto is a compelling blend of traditional craftsmanship and high performance materials. Trained under his father, Tsukasa Hinoura, a master blacksmith, Mutsumi has developed a reputation for excellent heat treatment, refined grinds, and beautifully executed blades.
At the core is Aogami Super carbon steel (~64 HRC), prized for its exceptional edge retention, high sharpness potential, and satisfying cutting feel. This is paired with stainless steel cladding, which significantly reduces maintenance while still allowing you to experience the performance of high carbon steel. The kurouchi nashiji finish adds a rustic, traditional aesthetic while also aiding food release during prep.
In hand, the knife has a reassuring heft and presence, offering stability and control across a wide range of kitchen tasks. The blade features a well executed distal taper and wide bevel geometry, contributing to both cutting performance and balance.
