Mutsumi Hinoura is the 4th generation of the legendary Hinoura family. They started forging kitchen knives in 1912 in the city of Sanjo, Niigata and have over a 100 years of experience. Mutsumi Hinoura is the son of the renowned Tsukasa Hinoura who is famous for his highly coveted "River Jump" Damascus blades.

Hand chiselled onto the blade is 味方屋 "Ajikataya", representing one of the Hinoura family brands.
