Hand-forged in Matsubara, Nagasaki, this knife by Katsuto Tanaka carries a legacy that traces back over 800 years. As a fourth-generation blacksmith at Tanaka Kama Kogyo, Tanaka-san continues a long-standing tradition of crafting blades entirely in-house - from forging to sharpening -  resulting in knives known for their character, sharpness, and reliability.

At its core is Aogami #2 (Blue #2) carbon steel, hardened to around 62–63 HRC, delivering excellent edge retention and a crisp, precise cutting feel. This high performance core is clad in stainless steel using the sanmai method, offering added durability and easier maintenance while still allowing the edge to develop a natural patina over time.

The blade features Tanaka san’s hexagonal hammered “wavy face” finish, giving it a striking, textured look while also helping with food release. Combined with a subtle nashiji texture, the finish adds both function and visual depth, balancing rustic charm.

Matsubara knives are known for their tall blade profiles and thicker spines, which taper smoothly toward the tip. This gives the knife excellent balance and a confident feel with excellent knuckle clearance, especially appreciated by those with larger hands while still maintaining good control and precision.
