Crafted by renowned blacksmith Makoto Kurosaki in Echizen, Japan, the Ryusei series is a perfect example of refined Japanese craftsmanship paired with outstanding everyday performance. Named Ryusei (流星), meaning "shooting star," the blade features a distinctive etched pattern that shimmers across its surface, giving each knife a striking sense of movement and depth.
At its core is VG7 stainless steel, a premium high carbon stainless steel developed by Takefu Special Steel. Offering an excellent balance of edge retention, toughness, corrosion resistance, and ease of sharpening. Hardened to approximately 61 HRC, the blade takes on a remarkably keen edge while remaining resilient enough for daily use.
In terms of geometry, the Ryusei has exceptional thinness behind the edge allowing the edge to bite into ingredients easily. Cutting edge is somewhat more rounded, making it a more suitable knife for those who prefer to rock chop.
