Forged in Tosa, Japan by young blacksmith Kyohei Shindo, this knife reflects a craftsman who chose the hard, traditional path and fully committed to it. Originally from Hokkaido and later studying in Okinawa, Shindo san was drawn early to making things by hand. His image of what a blacksmith should be led him to Tosa, where he trained relentlessly for years - often borrowing workshop space on his days off - before opening Kyohei Forging and his own workshop in 2020.

Shindo san is a true bladesmith in the old sense. He forges his own steel using Hitachi Blue #2 clad in soft iron, made with the traditional warikomi method - a demanding technique now practiced by very few. The result is a carbon steel knife that sharpens easily, takes an exceptionally keen edge, and rewards users who enjoy maintaining their tools.

His knives have earned a devoted following for their extreme thinness and cutting efficiency. The grind is ultra thin and precise, allowing the blade to pass through ingredients with almost no resistance. A subtle forged S-curve along the blade helps reduce sticking, while the polished kurouchi finish adds character and depth, echoing the raw elegance of classic Tosa blades. The tips are especially refined - thin, controlled, and ideal for precise work.

Shindo san’s philosophy is simple: make knives that are sharp, easy to sharpen, and trusted by cooks around the world. These are not flashy tools, but honest, high performance knives built by hand, with skill, patience, and intent - meant to be used hard, cared for, and kept for a lifetime.
