Kei Kobayashi is a somewhat younger knifemaker based in Seki, his knives are known for their incredible thinness and sharpness. Born in 1977, Kobayashi started out as a knife sharpener, sharpening and finishing knives for other brands in Seki. He later founded Kobayashi Hocho with his father, and quickly became known for extraordinary craftsmanship. His knives are true lasers and they certainly make you question: how sharp is too sharp? His attention to detail and sharpening experiences can be seen on this knife, the spine and choil are beautifully polished and make for a comfortable grip.
