To clear up any confusion - Chinese cleaver is a style of knife originating from Chinese Cooking - However! This particular Chinese cleaver is Made in Japan - "Chinese" only refers to the style of knife.

The brand Kanetsugu is the defacto value-for-money option when it comes to mid-range Japanese knives! This title used to belong to Tojiro but sadly they have increased their price without really upgrading their products.

The Kanetsugu Pro Chuka Bocho is made of AUS8 Molybdenum stainless steel, which makes this Chinese Cleaver ultra-premium. Heat-treated to 58 HRC, the grind is extremely thin for this hardness, and the cutting performance is laser like. Compared with other knives in this price range, Kanatsugu Pro has an excellent level of fit and finish. This cleaver can handle small bones on a chicken or fish without breaking a sweat.
