Hand forged in Tosa, Japan, the Hidetsune Deba embodies over a century of craftsmanship passed down through generations. Hidetsune knives are true working tools - made to cut, sharpen, and age beautifully with use. Each blade is individually forged and finished using traditional blacksmithing techniques that reflect Tosa’s long heritage of practical, honest craft.
This double bevelled Deba offers the heft and authority of a classic Deba while remaining approachable for both right and left handed users. Forged from Aogami #2 carbon steel and clad in soft iron, it delivers superb edge retention, effortless sharpening, and a resilient edge for heavy duty tasks such as filleting fish or portioning poultry.
The blade features a rustic kurouchi finish, contrasted by a misty kasumi blade road and hand chiseled kanji - visual hallmarks of hand-forging. A distal taper ensures balance and control, while the traditional oak wood wa handle provides a secure, comfortable grip that improves with age.
