The Hatsukokoro x Myojin SK Deba is a traditional Japanese fish butchery knife. Designed to deliver good performance at an approachable price, it combines practical SK high carbon steel with the renowned sharpening expertise of Tateo Myojin.
Forged from SK high carbon steel, this blade offers outstanding toughness, excellent edge stability, and is remarkably easy to sharpen - making it a favourite among professionals who value a keen, refined edge. Do note since the knife is fully carbon steel, it is rust prone.
Designed specifically for breaking down whole fish, the deba's thick spine and substantial weight allows it to cleanly separate joints and cut through small fish bones, while its finely ground edge provides the precision needed for delicate filleting. The single-bevel geometry delivers clean, accurate cuts with minimal damage to the flesh, making it an indispensable tool for traditional Japanese fish preparation.
