Handcrafted by Tamura Tooru of Myojin Hamono, the Shirasagi line by Hatsukokoro is a celebration of precision, tradition, and craftsmanship. Named after the elegant white egret, the Shirasagi series draws its name from the use of White #2 carbon steel, known for its keen edge and ease of sharpening. This Yanagiba is designed for right-handed use only, following the classic single-bevel Japanese format ideal for slicing sashimi and filleting fish with surgical precision.

The blade features a striking 45-degree migaki (satin) finish on the cladding, transitioning to a horizontal polish closer to the edge, giving the knife a refined and dimensional appearance. Paired with a traditional octagonal teak wa handle, the aesthetic is both grounded and elevated, balancing rustic character with modern elegance.

In hand, the knife feels exceptionally well-finished. The spine and heel have been carefully rounded for comfort, and the blade sits naturally in a pinch grip, making extended prep work feel effortless. The blade is forged with a White #2 carbon core clad in soft iron, a time-tested combination that provides excellent sharpness, edge retention, and easy re-sharpening—all while developing a beautiful patina over time.

NOTE: This is a fully carbon steel blade. To prevent rust, wipe dry during use and oil lightly after cleaning.
