The Hatsukokoro Shirasagi by Myojin single bevel collection is designed as a range of high performance tools made with top-tier craftsmanship, but offered at accessible pricing. Myojin Riki Seisakusho is a small family workshop based in Kochi, Tosa. Father Tateo Myojin specializes in single bevel sharpening, while son Naohito Myojin focuses on double bevels. Both work alongside their main blacksmith, Toru Tamura - the same team behind the well known Tetsujin knives.

This kiritsuke deba is hand-forged by Toru Tamura and sharpened by Tateo Myojin specifically for the Hatsukokoro brand. Made from Hitachi Aogami #2 (Blue #2) carbon steel and finished in a rustic kurouchi style, the blade offers superb sharpness and excellent edge retention. The deba with 165mm blade length would be more nimble, making it easily to get in tighter spots, especially while cleaning smaller fish. The larger 180mm deba would be considered a more full sized deba capable of handling most fish.

Fitted with an octagonal wenge handle and a buffalo horn ferrule, the knife feels confident and comfortable in hand. As a traditional single bevel blade, it is suitable for right handed users only.
