The Hatsukokoro Kaijin Gyuto is made with a Blue #2 (Aogami #2) carbon steel core wrapped in stainless cladding, it offers the sharpness and edge retention of carbon steel while staying easier to maintain than a fully reactive blade.
With a relatively tall blade height, this gyuto gives you excellent knuckle clearance and smooth performance on big prep tasks - whether you're breaking down cabbage, slicing melons, or handling larger cuts of meat. The 2.3mm spine gives the knife a confident, sturdy feel without being heavy or unwieldy.
