For those seeking something truly impressive, the Hatsukokoro x Nigara Irodori Kiritsuke Gyuto is as much a work of art as it is a cutting tool. Hand-forged by Nigara Hamono in Aomori, Japan, this striking blade showcases a vibrant damascus construction that combines Aogami #2 carbon steel with layers of copper, brass, and stainless steel. The result is a mesmerising blend of colours and geometric patterns unlike anything found in conventional kitchen knives. For us, this may be our favourite knife in terms of aesthetics in our lineup.
Beneath its stunning exterior lies a core of Hitachi Aogami #2 steel, renowned for its good edge retention, toughness and ease of sharpening. In terms of grind, it makes an excellent workhorse with good weight in the blade, great thinness behind the edge and excellent food release. This knife truly has both the looks and performance.
Completing the knife is a stabilised birchwood handle, providing a comfortable, secure grip while looking stunning as well.
