The Hatsukokoro Hikari SLD Damascus combines the distinctive curved Hikari profile with a refined etched Damascus finish, offering strong visual contrast in a clean, understated way.
At its core is SLD tool steel, known for high wear resistance and a sharp, slightly aggressive bite similar to carbon steel. SLD is considered a semi-stainless steel, it offers moderate rust resistance but is not fully stainless, so drying after use is recommended. In return, you get excellent edge retention and a crisp, confident cutting feel.
The blade is very thin - around 1.8mm at the spine above the heel - allowing it to move easily through dense ingredients. A slightly thicker edge adds durability, while a gentle convex grind helps with food release.
What truly sets the Hikari apart is its pronounced belly. Unlike flatter Japanese profiles, it closely resembles a European chef’s knife, making it especially well suited for rocking cuts. For those who want Japanese sharpness with a familiar curved profile, the Hikari SLD Damascus is a balanced, affordable, and unique option.
