The Hatsukokoro Ginrei (銀嶺, “silver peak”) Silver 3 series is designed for everyday cooking. It reflects a clean, refined approach to knife making - focused on performance, durability, and ease of use without unnecessary extras.
Forged with a Ginsan (Silver 3) stainless steel core, this knife offers crisp cutting performance, good edge retention, and very easy maintenance. Ginsan is well known for its fine grain structure and forgiving nature, making it an excellent choice for home cooks, young chefs, or anyone buying their first Japanese knife. It sharpens easily and holds an edge longer than most entry level stainless steels.
The blade features a classic nashiji (pear skin) finish, adding subtle texture while helping reduce food sticking. The even 50/50 double bevel makes the knife comfortable and predictable for both right and left handed users.
Finished with an octagonal bubinga handle, the Ginrei series feels balanced and secure in hand, with a quiet elegance that matches its clean performance.
