The Isamitsu Kurouchi series is handcrafted in Sakuragawa, Japan by Yuki Abe of Isamitsu Hamono. This knife reflects the philosophy of a new generation of makers - respecting tradition while refining it with their own ideas and techniques.
At the heart of the blade is Shirogami #1 (White #1) carbon steel, hardened to around 64 HRC. Known for its extremely fine grained structure, White #1 can achieve exceptional sharpness and offers a crisp, lively cutting feel prized by professional chefs. The core steel is protected by a stainless steel cladding in a san-mai construction, which helps reduce maintenance while still allowing the edge to develop a natural patina over time.
The blade features a combination of tsuchime (hammered) texture and kurouchi finish, giving it a rustic character while also helping reduce food sticking during use. Isamitsu is known for forging blades very thin at the cutting edge, allowing them to glide through ingredients with remarkable ease.
Founded by craftsmen who trained under the legendary Teruyasu Fujiwara, Isamitsu continues to push boundaries in terms of heat treatment while offering higher levels of fit and finish. The result is a knife that feels raw, honest, and full of character - impactful in appearance, exceptional in performance.
