The Misono UX10 Gyuto is widely regarded as one of the finest stainless steel chef’s knives available, combining Japanese craftsmanship with premium Swedish stainless steel. The UX10 delivers exceptional corrosion resistance while still offering the razor-sharp edge and easy sharpening typically associated with high-carbon knives. Hardened to 59 - 60 HRC, it strikes an ideal balance between sharpness, durability, and everyday reliability.
As Misono’s flagship series, the UX10 reflects the company’s commitment to precision and quality. The blade is ground in a 30/70 asymmetrical bevel, favouring right-handed users. As the blade has a more pronounced convex bevel on the right-hand side, food release should be improved compared to most other knives of a similar build.
The knife features full tang construction paired with water-resistant black pakkawood handle scales and a nickel silver bolster, creating a comfortable grip and excellent balance during long prep sessions.
