Kanetsugu calls this the Hamaguri grind (a type of clam) which tells you that it is a convex grind. Additionally the profile taper on the knife is what I consider a laser taper, thicker at the spine and quickly tapering at the edge making for a cutting experience with very little resistance. Because this blade is a monosteel AUS8, durability and toughness is not a concern. The brand prioritises functionality and affordability - resulting in a carefully curated selection of knives that anyone can appreciate. Tsunehisa's knives are made by a collective of blacksmiths and sharpeners across Sakai, Tosa and Seki. The brand was founded by Takayuki Shibata, world reknown for being an excellent knife sharpener and also the founder of Masakage, Koutetsu & Tinker. Over the years, Shibata-san has built close relations with many skilled blacksmiths across Japan, playing a huge role in growing the presence of Japanese kitchen knives internationally.

The Tsunehisa Ichi Series has an Aogami 2 core and stainless steel cladding, which combines the best properties of both types of steel. Carbon steel offers an excellent cutting performance due to its fine grain structure and high hardenability, allowing carbon steel knives to get sharper and stay sharper for longer. However, it runs into a major downside - rust. That's where the stainless cladding comes into play. While the cutting edge is carbon steel, it is sandwiched between 2 layers of stainless steel which as its name implies, is highly rust resistant. The end result is a knife that cuts like a carbon steel but with much less maintenance.

Not only is the area of exposed carbon steel minimised, the stainless steel cladding actually speeds up the development of protective patina on the carbon steel, resulting in much less rusting overall. Under the guidance of current President Go Yoshizawa, Nigara produces blades with stunning finishes. When a Nigara blade has a tsuchime (hammered) finish, you can bet it's not going to be a simple round hammer mark. There are going to be hexagons, crescents, waves and spikes hammered into the blade. It's complex, yet not in-your-face, you'll have to look close to notice it. The same can be said for their damascus patterns which can range from waves to swirls, to complete circles. Nigara Hamono spares no expense in making their blades uniquely theirs.

Nigara's VG10 collection boasts both a tsuchime and damascus finish. Rather than being highly polished, the blade is rather muted and matte. The details of its finishes reveal themselves to you on closer inspection. The most prominent thing that first catches your eye is the striking damascus pattern, which almost resembles waves slowly breaking onto a beach. As it is still relatively new, there is limited testing data and user feedback available. However, by comparing its composition to similar steels, we can better understand its properties and performance.

VG7 appears to be an optimised version of VG10, with the key difference being the addition of Tungsten. Unlike VG10, VG7 does NOT contain Cobalt, which contributes to hardness only at high temperatures above 450°C. Since kitchen knives are used at room temperature, the absence of Cobalt does not impact performance. Another notable change is the replacement of some Molybdenum in VG10 with Tungsten in VG7. While both elements contribute to hardness and carbide formation, Tungsten carbides are significantly harder - about twice as hard as Molybdenum carbides. This results in improved wear resistance without making the steel brittle. Ultimately, VG7 offers greater wear resistance compared to VG10 with a similar toughness, making it a more optimized steel.

When compared to Ginsan (Silver #3), VG7 shares a similar composition but contains Tungsten instead of Manganese. As discussed, Tungsten enhances wear resistance due to its exceptional hardness, while Manganese increases toughness. This suggests that VG7 is less tough compared to Ginsan but provides better edge retention at the same hardness level (HRC). Early reviews support this hypothesis, indicating that VG7 is just as fine-grained as Ginsan but maintains its sharp edge for longer.

Overall, VG7 appears to be a well-balanced and improved steel that enhances the performance of VG10 in a meaningful way. The end result is a knife that cuts like a carbon steel but with much less maintenance.

Blade Type: Petty
Core: Aogami Super (Blue Super) Carbon Steel
Cladding: Stainless Steel Cladding
Handle: Mono Ebony Octagonal Handle | Rosewood Octagonal Handle
Spine Thickness at Heel: 1.9mm

Blade Height at Heel: 33mm
HRC: 63-64
Weight: 85 | 81g
Blade Length: 150 | 152mm
Overall Length: 280 | 281mm

Seki Kanetsugu is a brand that always amazes us with their level of fit and finish. From the blade to the handle, every aspect of this series is unlike anything else in the market.

In pursuit of new technology and manufacturing processes, the Zuiun Kiwami features a jet black coating of DLC - "Diamond-Like Carbon". This coating, like its name suggests, approaches the hardness of diamonds and is extremely abrasion and scratch resistant. Additionally, DLC has an extremely low friction coefficient, which allows this knife to effortlessly glide through ingredients without damaging their integrity.

One concern we had was if the coating was prone to flaking, however, after looking into research on DLC, we found many promising results. Firstly and most surprisingly, DLC is used in coating artificial joints (like hip and knee replacements) due to its low friction and biocompatibility. This medical application shows us how stable and safe this coating is. Secondly, DLC is also used in coatings of coffee grinder burrs, which are responsible for cutting and grinding coffee beans into their desired grind size. This high speed, high torque application also indicates to us how stable the coating is under high load and stress.

On top of looking amazing, the Zuiun Kiwami is a practical knife with an excellent convex geometry; balancing edge toughness, sharpness and food release.

Nigara Hamono's Anmon Series features a distinctive raindrop damascus pattern that we have not seen replicated anywhere else. Said to be inspired by the Anmon Waterfalls, which flow from the UNESCO World Heritage Site Shirakami Mountains, the blade’s circular damascus pattern resembles water droplets forming ripples across the blade's surface. In an interview however, Toshiju Yoshizawa shared that his inspiration stemmed from Andy Warhol’s painting of John Lennon, particularly the intriguing distortion in Lennon’s glasses, which influenced the development of this design. Either way the blade's damascus finish is extremely captivating.

The Anmon series features a relatively thin, convex grind which ensures a good balance of performance, food release and durability. The easy to maintain stainless SG2 powdered steel core is heat treated to HRC 63 for an excellent edge retention. As a result, this knife not only looks exceptional, its performance and practicality are exceptional as well.

This specific Anmon has a full tang western handle, crafted from stabilised Ironwood and polished to a glossy shine. The aura of the knife is completely different from its Japanese handle counterpart. It's much more luxurious, the handle is dense, sculpted and feels extremely substantial in hand. The warm glow of Ironwood gives the handle depth and contrast, adding to its expensive look, complementing the raindrop damascus beautifully.

Note : Nigara knives tend to be shorter than their stated length because the measurement is from the neck to the tip, instead of the edge length.

Nigara's Aogami Super collection boasts a tsuchime (hammered) finish. Rather than being highly polished, the blade is rather muted and matte. The details of its finishes reveal themselves to you on closer inspection. The tsuchime pattern for this collection are hundreds of small waves hammered onto the surface of the blade. The bevel sports a subtle kasumi finish that ends with a polished edge. Overall the blade exudes a calm and confident presence, which is helped by its solid weight and handling.

Note: Nigara knives tend to be shorter than their stated length because the measurement is from the neck to the tip, instead of the edge length. This feature is also typical of Sakai-made knives.

Blade Type: Petty
Core: Aogami Super (Blue Super) Carbon Steel
Cladding: Stainless Steel Cladding
Handle: Mono Ebony Octagonal Handle
Spine Thickness at Heel: 1.7mm
Blade Height at Heel: 31mm
HRC: 63 - 64
Weight: 77g
Blade Length: 139mm
Overall Length: 266mm
